Chocolate Pie

Ingredients

  • 4 Heaping TBSP Cocoa Powder
  • 2 Cup Sugar
  • 4 TBSP Flour
  • 8 Eggs, separated
  • 2 Cup Milk
  • 1 2 TBSP Butter
  • 2 tsp Vanilla Extract
  • 1/2 Cup Kahlua (Optional)

Steps

  • Pie Crusts
    • Cook pie crusts ~7 min on center rack at 450F until golden brown
  • Filling
    • Begin heating milk on the stove, do not boil
    • Mix dry ingredients in a mixing bowl
    • Mix in egg yolks
    • Slowly add milk while mixing
    • Return mixture to stove and simmer
    • Add butter and mix in
    • Add vanilla and Kahlua(optional)
    • Stir occasionally and continuously as mixture begins to solidify
    • Remove from heat when filling is consistency of pudding
  • Pour hot filling into cooled pie crusts and level out
  • Remix meringue to proper consistency
  • Pour meringue on top of hot pie filling
  • Use spatula to peak meringue
  • Place in oven on center rack at 325F for 10-15 min, ensuring meringue does not burn
